The Bikini Cocktail

Makes enough for 10 servings

To make the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Citrus Syrup: Combine all the items inside a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Then, turn off the stove allowing it to reach room temperature entirely. Pour to a sterilised bottle, seal and store in the refrigerator, where it will keep for up to four weeks.

To make Premix: Combine the specified liquid ingredients into a sizeable container, allow it to infuse for an hour, then strain best through cheesecloth, so it's perfectly clear.

To serve: Measure 85ml of the premix to a stirring glass filled with ice, and stir carefully for about 60 seconds until cold. Filter to a cold coupe glass or equivalent, decorate with the cranberries and finish using a quick spritz of mandarin oil above the glass.
